Do people still use computers?
It seems like these days, all the things people used to do on computers, they now do on their Blackberries or other similar devices. Texting is the only way some people seem to be able to communicate effectively and for a pre-paid cell phone user like myself, it's annoying. What a weird summer!
In June, it wouldn't stop raining. July was okay but not quite summer-like. August, we got a few days of a heat wave. I almost had the hubby install the air conditioner. It was almost just too darn hot and then . . . back to the not quite summer-weather. It's actually been cold in the mornings.

You're Still Nursing?
Z2 made 20 months on the 29th of this month. I realized a few weeks back that I have been avoiding nursing him in public. Why? The reaction. Inevitably, someone will comment, "Wow, you're still nursing him?" which usually touches off a lively conversation about breastfeeding. Someone will invariably say they wanted to go as long as I am but "didn't have enough milk". Without a doubt, another will say, "Well, after 6 months, there's no real benefit to nursing . . . it's only comfort" which is usually a passive criticism of the fact that I'm still nursing. So subconsciously, I have been trying not to nurse in public. Z2 is old enough now where he can be distracted with games, toys and snacks so it's not imperative that I nurse him when he wants but it's just so telling of our society. Are some obstacles never meant to be overcome?
I'm awake because I can't sleep. I'm having one of the worst allergy attacks ever. On a scale of 1 to 10, this one is a 10. I'm finding it hard to catch my breath between sneezes much less relax enough to fall asleep. I can't really pinpoint what triggered it although I suspect it's all the moving we've been doing that kicked up a lot of dust. Despite my incessant Swiffering and vacuuming, there still must be some dust particles in the air. The Claritin I take is not lessening the severity of this attack even slightly. Say "Cheese" Cake!
Better Than Tofu Cheesecake
Ingredients (use vegan versions):
Crust:
1 1/4c graham cracker crumbs
2 tablespoon vegan sugar or other sweetener
1/4c margarine or oil
Filling:
2 lbs. soft silken tofu (well drained but not pressed)
8 oz. vegan cream cheese
1/4c pineapple juice frozen concentrate thawed
1/2c oil
1Tbs. lemon juice
1Tbs. vanilla extract
1/2c pure maple syurp
1Tbs. coriander
1Tbs. corn starch disolved in 2Tbs. water
Directions:
For crust: Melt margarine and blend well with graham cracker cumbs and sweetener. Press well into bottom of spring-form pan or round cake pan. Bake at 350F for 10 minutes. Let cool.
Filling: Mash tofu with vegan cream cheese. Add all other ingredients to tofu mixture and whip with hand mixer until well blended and very creamy. Try to get all tofu lumps out. Pour into crust and bake at 350F for 45-50 minutes. Turn OFF oven and leave in for 15 minutes more to help set center. When done edges should be golden and starting to pull away from sides of pan, center should be soft set (it will wiggle if you shake pan lightly). Cool about an hour then refigerate another 3 hours to set center. Keep refrigerated.
Serves: approx 12
Preparation time: 1 1/2 hours
