Easy Curried Tofu Scramble

Here is a really quick dish that's easy to make and delicious.

You'll need
2/5 brick of extra firm tofu (cut one brick of tofu into 5 parts and use 2--store the rest), pressed dry
1 cup chopped red pepper
1 cup chopped green pepper
1 cup onion chopped
3 carrots chopped (about 1 1/2 cups)
2 cloves garlic, chopped
2 tsps. good curry powder 
1 tsp. thyme
1/2 tsp. black pepper
1/4 tsp. red pepper flakes
salt to taste
2 tbsps. oil

What to do
Heat oil in a heavy pan.  Add onions to the hot oil and saute until the onions are translucent.  Add in the spices and stir for about 1 minute till fragrant.  Add carrots and garlic and stir for about 2-3 minutes just till they start to soften.  Add in your green and red peppers and saute just till they start to soften.  Crumble in your tofu.  Stir to incorporate.  Add salt to taste.  

Serve with whole wheat toast or in warmed pita pockets.  

That's it.  :) 

You can replace the carrots and pepper with frozen mixed vegetable if you like.  Just make sure they are thawed before you add the tofu.  You can make fried eggs this way too.  Just replace the tofu with 2 eggs, cracked and beaten.
